Strawberry Bread Recipe

Ingredients

  • ½ cup agave sweetener

  • ½ cup plain greek yogurt

  • 6 tablespoons unsweetened applesauce

  • 1 egg

  • 1 teaspoon vanilla bean paste

  • 2 cups all purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 2 cups strawberries, diced

  • 2 tablespoons all purpose flour


Preparation

  1. Preheat the oven to 350°F and line a 9” x 5” metal loaf pan with parchment paper.

  2. In a medium bowl, combine the agave, yogurt, applesauce, egg, and vanilla bean paste. Whisk to combine.

  3. In a small bowl, combine the 2 cups flour, baking powder, baking soda, and salt. Whisk to combine.

  4. Combine the dry ingredients into the wet. Using a spatula, stir to combine.

  5. In the small bowl, combine the strawberries and the 2 tablespoons flour. Stir to coat the strawberries in the flour.

  6. Add the coated strawberries to the mixture. Fold them into the batter to incorporate.

  7. Pour the batter into the prepared pan. Bake for 40 minutes.

  8. After baking, let cool in the pan for 10 minutes. After cooling in the pan, remove the parchment paper and move the bread to a wired cooling rack to cool completely.

  9. Once completely cooled, slice into 12 slices.
