Pineapple Salsa Recipe

Ingredients

  • 1 ½ cups diced pineapple, about ½ pineapple

  • ½ cup diced red bell pepper, about ½ medium red bell pepper

  • ½ cup diced orange bell pepper, about ½ medium orange bell pepper

  • ½ cup diced red onion

  • 1 tablespoon chopped cilantro

  • 1 ½ tablespoons lime juice, about 1 lime

  • ½ teaspoon salt


Preparation

  1. Cut the whole pineapple a little more than halfway vertically just past the bottom of the crown. Put aside the smaller side with no crown.

  2. The side with the crown, carve an outline close to the outside of the pineapple with a knife. Next, make vertical and horizontal marks to outline pineapple chunks.

  3. Use a spoon to scoop the pineapple out leaving the pineapple skin intact.

  4. If necessary, chop the pineapple until it is in small diced pieces. Place these in a medium bowl.

  5. Dice the bell peppers and the red onion. Chop the cilantro. Add to the bowl.

  6. Juice the lime and add the lime juice and salt to the bowl.

  7. Stir to combine and then fill the hollow pineapple half with the pineapple salsa.

  8. Serve immediately or place in the refrigerator in an airtight container.
