Ingredients
3 medium bananas, about 1 ⅓ cups mashed
¼ cup unsalted butter, melted
1 egg
1 tablespoon maple syrup
1 teaspoon vanilla extract
½ cup light brown sugar
1 ½ cups all purpose flour
½ teaspoons ground cinnamon
¼ teaspoon salt
1 cup semisweet chocolate chips
Preparation
Preheat the oven to 350°F. Line a 12 tin muffin tray with paper liners.
Place the mashed bananas in a medium/large bowl and whisk for 20 seconds.
Add the butter, egg, maple syrup, and vanilla to the bowl. Whisk to combine.
Add the brown sugar, flour, cinnamon, and salt to the bowl. Whisk to combine.
Fold in the chocolate chips.
Scoop the batter evenly across the 12 liners.
Bake for 15 minutes, flipping the pan around halfway through.
Let cool for 5 minutes in the pan. Remove and transfer to a wire rack.
Serve immediately or store in an airtight container.
